Rookyto Partisans Chocolatiers is one of the few French artisans to manufacture its own cocoa powder. This is obtained after a long process during which the cocoa beans are roasted and then refined into a liquid mass called liquor. This liquor is then pressed to separate the fat - cocoa butter - from the dry matter, which is then reduced to cocoa powder! Like its industrial counterparts, this cocoa powder has a light-brown color, low bitterness and fruity notes. It's called natural because it hasn't undergone any chemical treatment or alkalinization. Available in 150 g jars or in bulk, for professional or private use.
