Mariem Auguste-Mathieu draws inspiration from her Algerian origins, her childhood in Alsace and her travels to create original sweets such as Gazelle, featuring a tender filling filled with almonds and a cookie dough made with Charente PDO butter, local flour, to which is added a gentle note of orange blossom and a sweet touch that doesn't overpower the other ingredients. Gato Mariem's challenge was to develop an oriental pastry that is usually eaten the same day it is produced, into a travel-size cookie that can be kept (preservative-free and packaged in a modified atmosphere). For snack lovers, Gazelle is the perfect accompaniment to your gourmet moments over tea or coffee.
