Since the Renaissance, wine vinegar production has been historically linked to the Loire and Orléans. It was within the brotherhood of the city's Maîtres Vinaigriers that, over the centuries, the "Orléanaise method" was developed, a subtle process of slowly transforming wine into vinegar and aging it in oak barrels.
